Quick and Easy Microwave Syrup Sponge Pudding.

With the nights getting colder  its often nice to have a bit of comfort food and cakes and puddings fit that bill nicely.  Only problem is I am useless at baking cakes.
This recipe is brilliant because in under ten minutes you can knock up a gorgeous syrup sponge that tastes better than anything Heinz will give you in a tin,





You will need to make one pudding the following ingredients (I find that this is plenty for two as the syrup makes it VERY sickly.  Double ingredients for a bigger pudding but cooking time remains the same)


2 Tablespoons of Milk
50g of Sugar
50g Self Raising Flour
50g Butter/Margerine 
1 egg
Golden Syrup
Dash of Vanilla Essence if required.

Throw all of the above into a blender.

Mix until smooth.  In the meantime take a rounded pudding bowl and pour golden syrup into the bottom.  When the mix is ready spoon it in on top of the syrup.


DONT cover the dish, but microwave for five minutes.  Keep an eye on it but it shouldn't come over the top of the dish.


Let it cool for a few minutes then tip into a dish.


Smother with custard and share
